Skewers Marinated in BARI Goodness

Turn up the flame and throw these delicious skewers on the grill!

We have three tasty variations of skewers for you to choose from - Chicken, steak, and veggie. Each one highlights the versatility of Bari’s rich and bold EVOO and thick and tangy balsamic vinegar, adding depth, brightness, and that just-right finish to these summertime skewers. 

Try them all this 4th of July weekend—and don’t forget to drizzle generously.


What You'll Need For The Marinade:

  • 1/2 cup BARI Balsamic Vinegar (Classic or Fig for a sweeter taste) 
  • 4 tbsp. BARI Traditional Olive Oil
  • 2 tbsp. Dijon Mustard 
  • 2 garlic cloves (diced & crushed)
  • 1 tbsp. fresh Thyme
  • 1 tbsp. fresh Parsley
  • 2 tsp. salt
  • 1 tsp freshly ground black pepper
  • 2 tsp honey
  • 1 tsp crushed red pepper (optional, for a little kick)


What You'll Need For The Skewers:

  • 2 chicken breasts
  • 2 steaks 
  • 1 fresh pineapple 
  • 1 red onion
  • 2 red bell peppers
  • 1 pack of mushrooms
  • 1 Yellow Squash
  • 1 Zucchini
  • Remember to soak your wooden skewers in water prior to adding meats and veggies and grilling, this will help the stick not burn when grilling on an open flame.


Recipe Instructions:

Making the Marinade:

  1. Mix together all of the marinade ingredients and let sit in the fridge for 30 minutes to allow the flavors to meld together.

  2. Set aside and refrigerate about 1/4 cup marinade for basting skewers while grilling
  3. Split the remaining marinade between the chicken and the steak and let sit in the fridge over night marinating. 


Preppin
g the Veggies:

  1. Veggies can be marinated in 1/4 cup of olive oil and coarse sea salt, to taste, for a few minutes
  2. Once the veggies are marinated, start assembling the skewers, if you have other veggies you'd prefer to use, feel free to change it up! For example some people might want to use baby potatoes or Brussel sprouts on their steak skewers (Yum! just make sure you lightly parboil those veggies so they cook well when grilling)

 

BARI Chicken Skewers:

  • Chicken Breast (cut into approx. 1 inch chunks) 
  • Fresh Pineapple (cut into cubes) 
  • Red Onion (cut into squares)
  • Red Bell Pepper (cut into squares)
  • Repeat

BARI Veggie Skewers:

  • Squash (cut into cubes or half circles)
  • Zucchini
  • Red Bell Pepper
  • Red onion
  • Pineapple (optional)
  • Repeat 

BARI Steak Skewers: 

  • Steak (cut into approx. 1 inch chunks) 
  • Red Onion
  • Mushrooms (cut in half) 
  • Red onion
  • Zucchini (cut into cubes or half circles)
  • Red Bell Pepper 
  • Repeat

Cooking Up Your Skewers:

  1. Place the skewers on your grill - using a thermometer, check the thickest pieces of meat to ensure that your meat reaches 165°F (74°C) internal temp. before pulling these off the grill. 
  2. With the balsamic marinade you set aside, you can baste your skewers while they are grilling, the more marinade you add, the more flavorful! 
  3. Plate & finish off with a drizzle of BARI Traditional Extra Virgin Olive Oil and/ or some BARI Balsamic vinegar and enjoy alongside a rice pilaf or fresh salad -- ENJOY!
