This sweet Summer peach cobbler is a delicious dessert that beautifully highlights our vegan butter infused olive oil!

Here's what you'll need for the filling
- 6-8 ripe peaches, peeled, pitted, and sliced
- 1/4 cup Bari's vegan butter infused olive oil
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 2 tbsp. cornstarch
- 1 tbsp. lemon juice

For the topping
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1/2 cup Bari's vegan butter infused olive oil
- 1 cup oat milk (extra creamy) (Feel free to use regular milk if you'd prefer)
- 1 tsp. vanilla extract
Instructions
1. preheat the over to 350F (175C)
2. Prepare the filling:
- In a large bowl, combine the sliced peaches, Bari's vegan butter olive oil, granulated sugar, brown sugar, vanilla extract, ground cinnamon and ground nutmeg, cornstarch, and lemon juice.
- Mix well to coat the peaches thoroughly and set it aside to let the flavors meld.
3. In another bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, and salt.
- Add the oat milk, Bari's butter infused olive oil, and vanilla extract into dry ingredients. Combine together, the batter should be slightly thick.
4. Assemble the cobbler:
- Pour the filling in a 9x13 baking dish, spread evenly.
- Drop spoonfuls of the batter over the peaches.
5. Bake:
- Bake in the preheated over for 45-50 minutes.
6. Serve:
- Let the cobbler cool before serving. Enjoy it warm or cold with a scoop of creamy vanilla ice cream.
Optional: You can go through and give a light mix to the cobbler so that the batter on top combines with the peaches and peach juice below.
