This 4th of July, serve up some healthy and refreshing dishes for your friends and loved ones. We've got two recipes that highlight Bari's delicious butter Infused extra virgin olive oil and rich and flavorful Fig balsamic vinegar.

Crispy Caprese Sandwiches
What you'll need:
- 10 vine tomatoes, washed
- a loaf of focaccia or ciabatta bread
- Bari's butter infused vegan olive oil
- Bari's classic or fig balsamic vinegar
- Fresh basil leaves
- Dried thyme
- Pesto
- Fresh mozarella, (sliced rounds)
- Salt & Pepper to taste
Instructions:
1. Slice your tomatoes into rounds
2. In a bowl mix together 1-2 tbsp. of Bari's butter infused olive oil, dried thyme, and salt & pepper
3. Toss your tomatoes into the oil and thyme mixture
4. Place a skillet on Medium-high heat, drizzle butter infused oil over your bread pieces and place on the skillet to toast
5. Remove bread from skillet when it is golden brown and toasty
6. Spread pesto to your liking on the toasted bread, place your mozzarella, seasoned tomatoes, basil leaves and drizzle with your balsamic vinegar
7. Depending on the size of your bread, slice sandwiches into 2 inch pieces and place a toothpick in the center.

Watermelon Feta Skewers
What you'll need:
- 1/4 watermelon
- 1 container of Feta Cheese block
- 24 small skewers
- Bari's fig balsamic vinegar
- Fresh mint leaves (washed)
Instructions:
1. Cut feta and watermelon into 1 inch cubes
2. Start assembling your skewers - place a cube of cheese, a mint leaf, and a cube of watermelon. Repeat this on all skewers.
3. Place in the fridge to chill.
4. Plate and drizzle some fig balsamic over the skewers in front of your guests and enjoy!!
