Bacon-Wrapped Spinach Dip Crostini with Bari Olive Oil: A Thanksgiving Appetizer to Remember

Full Recipe:
What you'll need for the spinach dip:
- 2 tbsp. Organic Extra Virgin Olive Oil
- 2 tsp. of crushed garlic
- 6 cups of chopped spinach
- 1 cup of sour cream
- 1 cup of cream cheese (8 oz. package)
- 1/2 cup mayonnaise
- 1 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt & Pepper to taste
- *optional* 1/2 tsp. red pepper flakes
For the crostini:
- 1 French baguette OR a loaf of sourdough (sliced 1/2 inch thick)
- 3 tbsp Organic olive oil - for brushing on bread
- Salt & pepper to taste
- 8-10 slices of bacon (preferably thick-cut)
Full Recipe:
- Heat 1 tbsp. of Organic Bari olive oil
- Add garlic and onion, and sauté until softened and translucent (about 3-4 mins)
- Add in the chopped spinach and cook until wilted, about 2-3 mins. Remove from heat and let it cool slightly.
Prep the bacon:
- On foil lined baking tray lay down pieces of bacon and cook at 375 degrees for about 15 minutes
- When soft and cooked take out and place on paper towel
Prepare the crostini:
- For our recipe we used fresh sourdough bread, but you can also use baguette for smaller servings
- We cut it into 1/2" thick slices and cut that in half.
- On a baking sheet drizzle some Organic Bari olive oil and lay down the slices of bread
- sprinkle a bit of salt and pepper
- Bake the bread for 10 minutes until slightly crispy *They will spend more time in the over*
Assemble the Crostini:
- Take each bread slice and add about 2 tbsp. of the spinach dip
- Wrap a slice of bacon around the bread and lay back on baking sheet
- Once all pieces are wrapped, bake at 375 degrees for an additional 10 minutes or until bacon and bread are crispy.
- For an extra touch, drizzle a small amount of Bari's olive oil over the top of the crostini.
