Chipotle-Honey Vinaigrette Recipe: 

What You'll Need: 

  • 2–3 tablespoons honey – Adjust depending on how sweet you like it.
  • 1/2 cup Chipotle Infused olive oil
  • 2 tablespoons apple cider vinegar – Adds tang and brightness.
  • 1 tablespoon fresh lime juice – For a citrusy zing.
  • 1 chipotle pepper in adobo sauce – Use one for mild heat, two for a bigger kick.
  • 1 teaspoon adobo sauce – Enhances that smoky depth.
  • 1 small garlic clove, minced – A little sharpness rounds out the flavors.
  • 1/2 teaspoon ground cumin – Earthy and warm.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions: 

  1. Blend the base - In a blender or small food processor, combine the honey, vinegar, lime juice, chipotle peppers, adobo sauce, garlic, cumin, salt, and pepper. Blend until smooth.
  2. Emulsify with oil - With the blender running (if possible), slowly drizzle in the olive oil until the dressing is creamy and emulsified. This helps the oil and vinegar stay combined.
  3. Taste and tweak - Adjust to your liking — more honey for sweetness, lime for acidity, or another chipotle pepper if you want to crank up the heat.
  4. Store it - Pour into a jar or airtight container. Store in the fridge for up to 1 week. Shake well before using, as natural separation may occur.
