This Chinese-Inspired Chicken Salad brings together the savory-sweet balance of classic Chinese cold chicken dishes with a modern citrus twist—thanks to BARI’s Orange Olive Oil.

This is not a traditional Chinese recipe, but rather a nod to cold shredded chicken salads like liang ban ji si, which are staples in many Chinese households—especially during hot summer months. We’ve simplified the process, stayed true to core flavors like soy sauce, rice vinegar, and sesame, and added the subtle brightness of orange olive oil for a fresh, California-style finish.

Orange-Infused Olive Oil?!
Yup! BARI’s Orange Olive Oil is a natural citrus-infused extra virgin olive oil that adds brightness without being overpowering. In this salad, it replaces the need for citrus juice or zest, delivering a smooth, aromatic layer that lifts the whole dish. It's especially perfect in chilled salads where bold oils can shine. Give it a try! 

Ingredients (2-3 servings): 

For the Salad:

  • 2 cooked chicken breasts or thighs (sliced or shredded)
  • 1 cucumber, julienned or thinly sliced
  • 1 carrot, julienned
  • 2 scallions, thinly sliced
  • 3 peeled Mandarins (optional)
  • Handful of cilantro (optional)
  • 3-4 cups of shredded preferred leafy vegetable - (lettuce/ spinach)
  • 1 tbsp toasted sesame seeds

For the Orange-Soy Vinaigrette:

  • 2 tbsp BARI Orange Olive Oil
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey or sugar
  • Salt and white pepper to taste
  • 1 small garlic clove, minced (optional)
  • ½ tsp fresh grated ginger (optional)
  • 1/4 cup crushed peanuts (optional - for an extra crunch)

Full Recipe: 

  • Whisk the dressing: Combine all vinaigrette ingredients in a bowl or jar. Whisk until well blended. Taste and adjust seasoning if needed.
  • Assemble the salad: In a large bowl, combine the shredded chicken, cucumber, carrot, scallions, and cilantro. Pour the dressing over and toss to coat.
  • Finish and serve: Sprinkle with toasted sesame seeds. Chill briefly or serve immediately.
