A sweet strawberry sorbet with a lemony twist

The temps are climbing here in the California Valley, and that means one thing: it’s officially cold treat season. 🍨 With strawberry season in full swing, we couldn’t resist spotlighting this juicy gem of a fruit. Enter: our velvety, sweet, and bright-as-sunshine strawberry sorbet.

Made with fresh lemon juice and a splash of Bari’s luscious lemon-infused olive oil, this sorbet is smooth, zesty, and just the right kind of fancy. Save this one — it’s destined to be the star of your next summer BBQ.

What you'll need:

  • 1 lb. (about 3 cups) fresh strawberries, hulled (be sure to pick the sweetest and ripest berries you can!)
  • ½ cup sugar (adjust to taste)
  • 1 tbsp lemon juice
  • ⅓ cup water
  • 2–3 tbsp BARI lemon infused olive oil
  • Pinch of sea salt

Complete Recipe

  1. Soak your strawberries in water and a splash of vinegar
  2. Rinse them thoroughly 
  3. Slice the strawberries into big chunks
  4. In a blender add in the strawberries, sugar, lemon juice, lemon infused olive oil, and a pinch of sea salt, as well as 1/3 cup of water
  5. Be sure to strain your blended puree
  6. Cook down your puree for about 7-10 minutes on low 
  7. Pour into a metal cooking dish and let cool 
  8. Once cool place in freezer for about 3 hours or until firm 
  9. Scoop and enjoy!
