This recipe took me by surprise the day I made it. I was not sure how the ingredients were going to complement each other, but I am glad I followed my gut. The face I made after the first bite was as if I reached enlightenment :)
Red, White and Blue Pizza
Ingredients:
Pizza crust dough
1 cup fresh sliced strawberries
½ cup fresh blue berries
3 ounces brie cheese sliced
Bari black berry balsamic vinegar
Bari Rosemary infused olive oil
Fresh basil leaves
Instructions:
First, we want to start by reducing the balsamic vinegar- a very simple step but it will take some time so you might want to do it ahead of time.
To reduce the balsamic vinegar, combine 1 cup of vinegar with ¼ cup of honey in a small pot and cook over medium to high heat, stirring constantly. Bring to a boil and reduce heat to low and simmer for 20 minutes until reduced by half. Set aside and store in an airtight container.
Pre-heat oven to 450 degrees Fahrenheit. Drizzle olive oil in a large baking pan (or you can also use a large cast iron pan), spread the pizza dough and pre-bake for 5 minutes.
Remove from oven and drizzle about ½ tablespoon of olive oil on top of dough. Arrange the slices of cheese, as much as you want, then arrange the sliced strawberries and blue berries on top and bake for 13 minutes.
Remove and arrange fresh basil leaves on top and drizzle two tablespoons of the reduced balsamic vinegar (or as much as you want) and Tadaa! Hold for applause!
