Marinated Goat Cheese with roasted grapes and Olive Oil

The surprisingly balanced contrast of this appetizer cannot be understated. It is savory and sweet; rich and balanced, earthy and flavorful. Create a fragrant and savory appetizer with a rich mixture of goat cheese, roasted grapes, a bouquet of natural seasonings and Bari’s Orange Infused Olive Oil. Use this marinate as a spread with lightly toasted bread, seasoned crackers or a salad topper.

Marinated Goat Cheese with roasted grapes and Olive Oil



  • 8 ounces of goat cheese
  • 2 cups of seedless red grapes
  • 4 sprigs fresh thyme
  • 3 bay leaves
  • 3 garlic cloves
  • ½ teaspoon coriander seeds
  • 1-star anise pod
  • 1 strip of orange zest (skin)
  • ½ cup of Orange infused Bari Olive Oil
  • Sal and pepper
  • 1 Baguette diagonal sliced


Step 1:

  • Preheat oven 350 degrees F.
  • Arrange grapes in a baking sheet
  • Add 2 tablespoon of olive oil, a pinch of salt and pepper and mix well
  • Roast for 45 minutes until skin is wrinkled
  • Remove and let them cool.

Step 2:

  • In a saucepan place the coriander, garlic, bay leaves, star anise pod, orange zest, thyme and olive oil
  • Cook on low heat for 15 minutes stirring occasionally.
  • Remove and let cool. 

Step 3:

  • Slice cheese in 1/4 inch.

Step 4:

  • In a large mason jar pour all ingredients, including the cheese.
  • Cover and let marinate overnight at room temperature.
  • Add more salt and pepper if needed.

Final Step:

  • To serve, arrange in a large cheese plate.
  • Enjoy best with sliced French Baguette toasted for 5 minutes in the oven.
